Donovan Broussard

Title

Clubhouse Manager & Executive Chef

Donovan has 25+ years of experience in Food & Beverage. He knows the business inside and out, having worked in all aspects including chef, server and catering. Donovan was born in San Saba, Texas and was raised in Jeanerette, Louisiana. He attended the University of Southwestern Louisiana and The Culinary Institute in Lafayette. Donovan started his career at the City Club downtown at the top of the FNB Towers where he worked for 6 years. He held multiple Executive Chef positions and also helped to open a local restaurant before returning to City Club as the Food & Beverage Director/Executive Chef in 2013.

Brian Mudge

Executive Sous Chef

Brian Mudge has over 24 years experience in the restaurant and catering industries. He is a native of Birmingham, AL and moved to Lafayette, LA in 1981. Brian began his career at City Club in 2002 where he worked in the restaurant kitchen for three years. He then held multiple Executive Chef positions and helped to open various restaurants. Brian returned to the City Club kitchen in 2013.

Zach Doise

Sous Chef

Zach Doise has over 13 years of experience in the food and beverage industry holding positions ranging from bartender to General Manager. He was born in Eunice, LA and grew up in Omaha, NE. He returned to Louisiana in 2007 and attended the Louisiana Culinary Institute in Baton Rouge. Prior to joining the City club at River Ranch team in 2018, Zach was a food truck entrepreneur and managed the kitchen at Pop’s Poboys. Zach’s love for cooking came from his many travels as a child.
